I hope everyone had time to spend with their family and eats lots of yummy food! I have been in the kitchen nearly all day making chicken (we aren't a big fan of turkey), all the sides; including corn, salad and Poutine (how Canadian, eh?!). I made brownies as well and we had to have some apple a la mode.
Also, I've been busy today prepping food for this upcoming week. I've cooked some zucchini & meat, and lentils (separate dishes of course). I find making food over the weekend helps me over the week so, i'm not rushing home or eating out all week.
Anyways, back to Thanksgiving. I know I’m not the only one who on Thanksgiving thinks about what and who you are thankful for. I know this sounds cliche but It’s easy to take so many things for granted and we are so busy running around that we sometimes forget how fortunate we are. I love taking the time to count all of my blessings and Thanksgiving is a great time to think about what you should be thankful for and for some self-reflection, Hopefully, you had a chance to think about what you are grateful for and to count all of your blessings.
As I go back to my meal, we just wanted to take a moment and let you know I am so grateful for all of you. We feel so lucky every single day to have such a wonderful, smart, kind community of people here who support us! You all inspire me and I feel very lucky to have your support and friendship!
